Banana Cake
2 cups sugar
1 cup salted butter (2 sticks)
4 eggs, lightly beaten
3 cups all purpose flour
1 ½ teaspoons baking soda
½ cup buttermilk
4 medium bananas, mashed (about 2 cups)
1 tablespoon vanilla extract
Preheat oven to 350 degrees. Grease and flour a Bundt pan and set aside. Cream together the sugar and butter until incorporated. Add eggs into butter and sugar mixture. Sift together flour and baking soda. Add flour alternately with buttermilk. Fold in bananas and vanilla. Pour batter into prepared Bundt pan and bake for 45 minutes or until toothpick test comes clean. Cook for 30 minutes and then remove pan and finish cooling the cake on a cooling rack.
Makes 10 to 12 servings
Just a Thought:
You can add 1 cup pecans to the flour mixture. The flour surrounds the pecans and keeps them from sinking to the bottom of the cake pan, which in turn becomes the top of the cake when it is inverted.
