Chocolate Dipped Fluffernutter Cookies
1 box Ritz crackers
1 small jar peanut butter
1 (7 ounce) jar marshmallow cream
1 pound chocolate bark
Mix together peanut butter and marshmallow cream. Spread mixture onto a Ritz cracker. Top with another cracker and set aside. Repeat until you have 68 sandwiches.
Melt chocolate bark in microwave or double boiler until all bark is melted.
Dip sandwich cookies into chocolate, covering both sides. Place cookies on waxed paper or a silicone baking sheet and allow the cookies to harden. I place my cookies I the freezer for 5 to 10 minutes to speed up the process. Store the cookies in an airtight container.
Makes 68 cookies
