Consommé Rice
This recipe was given to me by my friend Nikki in Memphis. We were neighbors and everyone in our neighborhood would get together on the weekends fairly regularly and cookout. Nikki brought this to go with our dinner and I thought it was "the bomb"! It has been a constant in our house ever since-Thanks, Nikki.
1/4 cup butter
1 cup long grain rice-I like Zatarain’s brand
1 can beef consommé
1 1/3 cups hot water
1 beef bouillon cube
3 tablespoons chopped dried onions
In a large measuring cup, mix together water, beef bouillon cube and dried onions. Allow mixture to sit for 15 minutes. In a medium saucepan, melt butter. Sauté the rice until it is opaque. Add beef consommé and the water and beef bouillon mixture. Bring to a boil. Boil for 2 minutes and turn heat down to the lowest setting. Cover saucepan and allow to simmer over low heat for 30 to 40 minutes. Fluff before serving.
This is great with a roast chicken and a crisp green salad.
