Easy Pralines

Easy Pralines

¼ cup butter (NOT margarine)
1 cup packed light brown sugar
1/3 cup heavy whipping cream
1 teaspoon vanilla extract
1 cup powdered sugar
¾ cup chopped toasted pecans

Have all ingredients and equipment ready. This process is quick!

Bring butter, brown sugar and whipping cream to a boil in a 2-quart saucepan over medium to medium-high heat, stirring often. Boil 1 minute. Remove from heat. Whisk in vanilla extract and powdered sugar. Allow to cool 3 to 4 minutes, until slightly thickened. Stir in pecans. Quickly spoon teaspoons of praline mixture onto waxed paper sheets (or silicone baking sheets). Allow to cool completely before removing from sheets. Store in an airtight container with waxed paper sheets between layers.

Makes about 3 dozen.
