Pete and Sam's Italian Spinach
1 pkg (10 oz.) frozen chopped spinach
4 tbsp. butter or olive oil
2 cloves garlic
Parmesan cheese
1 egg, beaten
Cook spinach according to directions. Drain in colander, pressing water out.
Melt butter or oil in skillet. Press the garlic into the oil and saute a few minutes. Remove garlic. Add spinach, salt, if needed, and stir into oil, sprinkling liberally with Parmesan cheese. Right before serving, stir the egg into the spinach and stir it in until cooked. Serve as a side dish to spaghetti, lasagna or manicotti.
Note: Do not use an iron skillet or spinach will have a metallic taste.
Italian Spinach
2 pkgs. (10 oz. each) frozen chopped spinach
1 cup water
1 tsp. salt
1 tsp. garlic powder
1/2 tsp. black pepper
1/4 cup olive oil
1 egg, beaten
1/3 cup Parmesan cheese
Place spinach and water in large frying pan over medium heat. Cook until all moisture is removed. Mix all other ingredients and add to spinach. Blend quickly to thoroughly incorporate egg mixture. Reduce heat and let simmer about 10 minutes.

Spinach and Eggs Grisanti
1 pkg. (10 oz.) frozen chopped spinach
2 slices bacon
3 tbsp. olive oil
1 small garlic clove, minced
1/4 tsp. salt
1/8 tsp. pepper
1/4 tsp. monosodium glutamate (MSG, sold as Accent)
3 tbsp. freshly grated Parmesan cheese, divided
2 eggs
Cook spinach according to package directions. Drain thoroughly, pressing out as much liquid as possible. (The dish improves in proportion to the amount of liquid you press out.)
Saute bacon until crisp. Drain on absorbent paper.
In skillet, heat olive oil and garlic. Cook until garlic is golden brown. Add spinach, salt, pepper and MSG. Spread spinach mixture over bottom of skillet and sprinkle with 1 tablespoon freshly grated Parmesan cheese. Cook, turning spinach over, until very hot. Break in 2 eggs and keep turning until eggs are cooked. Crumble and add crisp bacon, stirring to mix.
To serve: Drain off any excess oil from skillet. Turn spinach onto warm serving platter and sprinkle with remaining 2 tablespoons grated Parmesan cheese.
