MAC’s Rice Pilaf

MAC’s Rice Pilaf

2 tablespoons olive oil
1 large onion, chopped
3 cups Basmati rice
6 cups chicken broth
Salt and Pepper to taste

Sauté onion in olive oil until translucent, about 5 minutes. Add rice and cook until rice has turned opaque, about 2 to 3 minutes. Add chicken broth and stir well. Bring rice mixture to a boil.. Cover and turn down heat to low. Cook for 15 to 20 minutes, or until all liquid has been absorbed.

Makes 8 to 10 servings
