Muffin Mix Cookies
1 (17.5 ounce) package of Krusteaz Fat Free Cranberry Orange Supreme Muffin Mix*
1 egg
¾ cup (1 ½ sticks) butter, melted
Preheat oven to 350 degrees. Mix all the ingredients together. Scoop out 1 tablespoon of cookie batter onto a Silpat or parchment lined baking sheet. (I was able to get 15 scoops per tray). Bake for 15 to 18 minutes, turning the trays halfway through. Cookies should be light brown on the edges and golden on top. Remove cookies from trays and cool on a cookie cooling rack.
Makes 30 cookies
*Note: you can use any quick bread or muffin mix as long as it has at least 15 ounces or more in the package or combine 2 mixes to make at least 15 ounces) The first time I had these was at Williams-Sonoma. They made them with their Spiced Pecan Pumpkin Quick Bread Mix (18 ounce package). It is an absolutely delicious mix, but it is only available during Halloween and Thanksgiving. I thought I would give it a whirl with something that is in the regular grocery store-hence the muffin mix cookies. Enjoy!
