Rum Butter Balls
1-3/4 cup cake flour
¾ cup chopped pecans
6 ounces chocolate chips
¾ cup butter
¼ teaspoon salt
½ cup icing sugar
3 teaspoons rum (or 1 tsp rum extract + 2 tsp water)
Combine flour, pecans and chocolate chips. Cream butter. Add salt, sugar, and rum. Add dry ingredients. Mix. Roll into walnut size balls. Bake on ungreased pan, 20 minutes at 325 degrees. Don't over-bake!!
Cool a bit & roll in icing sugar while warm. Put on waxed paper.
