Sausage and Sweet Potato Smash

4 large sweet potatoes, peeled & quartered
1 lb. package breakfast sausage (personal note, I'm going to use turkey to make this "lite")
1 large yellow onion, chopped (to make this quicker, use frozen chopped onion!)
1 tbsp. fresh thyme leaves
salt and ground pepper, to taste
Bring a large pot of salted water to a boil. Add the sweet potatoes and cook until tender, about 25 minutes. In a large skillet over medium-high heat, brown the sausage meat, breaking it as it cooks. Drain off any excess oil or moisture, then add the onion and continue cooking until the onion is soft and starting to brown, about 6 minutes. Remove the skillet from the heat and add the thyme.When the sweet potatoes are cooked, drain them well and add to the sausage mixture. Smash them together and season with salt & pepper.
Serves about 10.
