Shrimp Po Boy Sandwich

Shrimp Po Boy Sandwich

1 box Gorton’s frozen popcorn shrimp*
1 package Cobblestone Mills Po Boy Rolls,buttered & toasted in oven or grilled
1 bag shredded lettuce
1 tomato, thinly sliced
Po Boy Sauce (see below)
Cocktail Sauce (see below)

Fry the shrimp according to package directions. Set aside. Spread 1 to 2 teaspoons Po Boy sauce on each side of the roll. Place 2 thin slices of tomatoes on each bun. Top with shredded lettuce and then the popcorn shrimp. Drizzle Po Boy Sauce over cooked shrimp. Serve with Cocktail Sauce, a crunchy, cold dill pickle, and some sweet potato fries.

*NOTE: You can use fish or oysters

Po Boy Sauce

1 ¼ cups Hellman’s mayonnaise
4 teaspoons lemon juice
1 tablespoons + 1 teaspoon Old Bay seasoning
2 tablespoons Creole mustard

Mix well and chill for at least 30 minutes.

Makes 1 ½ cups sauce

Cocktail Sauce

1 cup catsup
2 tablespoons prepared horseradish
1 tablespoon fresh lemon juice
½ teaspoon Worcestershire sauce
¼ teaspoon salt
A couple of grinds of black pepper

Mix all ingredients well. Allow to chill for at least 30 minutes before serving.
