TexMex Salad

TexMex Salad

6 handfuls mixed salad greens
2 cups sliced grilled chicken
1 cup sliced black olives, drained
8 green onions, sliced
8 sliced bacon, cooked
1 cup shredded cheddar cheese
2 large tomatoes, seeded and chopped
Avocado Dressing, see recipe below

Divide mixed salad greens into 4 entrĂ©e-size salad bowls. Place ½ cup chicken breast, ¼ cup sliced black olives, 2 sliced green onions, 2 slices cooked and crumbled bacon, ¼ cup shredded cheese and ½ of a chopped tomatoes. Drizzle with Avocado dressing and serve immediately.

Avocado Dressing

1 avocado, peeled and mashed
½ cup sour cream
¼ cup vegetable oil
1 clove garlic, smashed
1 ½ teaspoons sugar
1 ½ teaspoons chili powder
¾ teaspoon cayenne pepper
1 ½ teaspoons ground cumin

In the bowl of a food processor, add all ingredients and blend until smooth. Chill for at least 2 hours. Mix well before serving.
