Tomato Aspic

Tomato Aspic

3 (3 ounce) packages of Lemon flavored Jell-o
5 cups tomato juice
Dash of Tabasco sauce
3 tablespoons of Worcestershire sauce
1 clove garlic, minced
3 tablespoons white prepared horseradish
2 tablespoons lemon juice
Dash of salt

In a medium saucepan, heat 2 ½ cups tomato juice to boiling. Remove from heat and dissolve Jell-o in hot juice. Add remaining tomato juice and mix thoroughly. Add remaining ingredients and pour into an oiled 9x13-inch baking dish. Chill until firm. Once firm, cut into squares and garnish with a dab of Hellman’s mayonnaise and a sprig of parsley.
Makes 12 servings

This is a classic Southern Tea Room favorite. Serve it alongside a fresh scooped out tomato that is filled with chicken, tuna or shrimp salad or place a scoop of those salads on top of aspic.
