Tomato, Cucumber, and Onion Salad

Tomato, Cucumber, and Onion Salad

1 cup cucumber pieces, halved and seeded
1 cup tomatoes, halved, sliced and seeded
3/4 cup onions, halved and thinly sliced
3 tablespoons vegetable, corn or olive oil (whichever is preferred)
1 tablespoon apple cider vinegar
1 teaspoon Italian seasoning
1 teaspoon chopped fresh garlic
Salt and pepper, to taste

Put the cucumbers, onions and tomatoes into a medium sized bowl. Mix oil, cider vinegar, and garlic. Pour over cucumber mixture. Season with salt and pepper. Mix and serve immediately.

"Ooh, MAC, I make this ALL the time in the summer. Here are my variations: sliced red onion, cherry tomatoes halved instead of full-size tomatoes, balsamic vinegar instead of regular. I usually just do the balsamic and sprinkle a little Splenda over the top before mixing and chilling. SO DARN GOOD!!! I think I need to make some today!! :)"
