Banana Split Pie

Banana Split Pie

¼ cup sugar
½ cup butter, melted
1 ½ cups graham cracker crumbs
2 egg whites (I use powdered egg whites)
2 cups confectioners’ sugar, sifted
½ cup butter, softened
4 medium bananas
1 (15 ¼ ounce) can crushed pineapple, drained
1 (8 ounce) carton Cool Whip
Maraschino cherries
Chopped toasted pecans

Mix sugar, melted butter, and graham cracker crumbs together. Press into a 9x13-inch baking dish. Beat 2 egg whites, confectioners’ sugar and ½ cup softened butter. Spread over graham cracker crust. Slice the bananas over the confectioners’ sugar mixture. Top the banana layer with the drained, crushed pineapple. Spread with Cool Whip. Top with Maraschino cherries and chopped pecans. Chill for several hours.

Makes 8 to 10 servings
