Elephant Ear Potatoes

Elephant Ear Potatoes
from Tea Room Treasures by The Woman's Echange in Memphis, Tennessee

2 large baking potatoes, quartered
Melted butter
¼ cup grated Parmesan cheese
¼ cup bread crumbs

Preheat oven to 325. Dip potatoes in melted butter. Roll in bread crumbs and Parmesan cheese. Bake for about 45 minutes.

Makes 4 to 6 servings
