Fried Cabbage

Fried Cabbage

This was a tradition in my family on New Year’s Day. My mom is of German decent and a  Yankee. My dad is a good ole Southern boy (really he is a Texan, first and foremost!) We would have black-eyed peas and cornbread with fried cabbage. Interesting, but that is how you do it when you are a mixture of cultures and traditions are born!

1 medium head cabbage, chopped
3 apples -- peeled, cored, and chopped
4 to 5 slices apple smoked bacon, cubed
2 tablespoons brown sugar
1 teaspoon vinegar
salt and pepper to taste

Combine the chopped cabbage and apples in a large bowl.
In a large heavy skillet, cook the bacon until crisp. Add the brown sugar and vinegar. Stir in the apples and cabbage; cook over low heat until tender. Season with the salt and pepper to taste.

Makes 6 servings
