Fabulous French Onion Soup
This is a tweaked version of 4 different recipes and then I put my own spin on it. Hope you enjoy it
1/4 cup olive oil
1/4 cup butter
4 to 6 yellow onions, peeled and thinly sliced (about 2 pounds)
1 tablespoon all-purpose flour
2 tablespoons sugar
3/4 cup wine-I like a Chardonnay, but have used Rose, White Zin, Champagne, Prosecco and Pinot Grigio-basically it is what you have on hand theat is light in color and tastes good
1 quart beef stock
2 1/2 cups chicken stock
Salt and pepper
1/4 teaspoon dried thyme, crushed
1/2 loaf Foccacia or French baguette, cut into cubes
Olive oil
Salt and Pepper
1 1 2/ cups Gruyere (or Swiss) cheese, grated
