Grown Up Grilled Cheese Sandwich

1 (11 ounce) log goat cheese
8 oven-roasted roma tomatoes*
½ cup basil pesto
8 slices rosemary foccacia bread
1-2 tablespoons unsalted butter

Spread goat cheese on 4 slices of bread. Spread pesto on top of goat cheese. Add the roasted tomato slices. Cover each prepared slice of bread with another piece of bread. Butter evenly the top of each sandwich. Preheat a 10-inch skillet to medium heat. Place sandwich, butter side down in skillet. While first side is grilling, butter the second side of bread. Cook until golden and crusty, about 3 to 4 minutes. Carefully turn and cook the second side until it is golden, about 2 to 3 minutes.

Makes 4 sandwiches

Note: you can you a Panini press, if you have one.

*Roasted Tomatoes

12 plum tomatoes, halved lengthwise, cores and seeds removed
4 tablespoons good olive oil
1 1/2 tablespoons balsamic vinegar
2 large garlic cloves, minced
2 teaspoons sugar
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

Preheat the oven to 450 degrees F. Arrange the tomatoes on a sheet pan, cut sides up, in a single layer. Drizzle with olive oil and balsamic vinegar. Sprinkle the garlic, sugar, salt, and pepper over the tomatoes. Roast for 25 to 30 minutes, until the tomatoes are concentrated and beginning to caramelize. Serve warm or at room temperature.
