Turkey Wraps with Chipolte Mayonnaise

This recipe came from Bon Appétit and I have made some changes. This is one of our favorite summertime sandwiches. A little spicy, but oh so good!

Chipotle Mayonnaise:
1 cup mayonnaise
6 tablespoons chopped fresh cilantro (this is about 1 bunch cilantro)
2 green onions, minced
2 tablespoons minced canned chipotle chilies in adobo
2 teaspoons fresh lime juice

For wraps:
1 package (10-inch-diameter) spinach tortillas (6 per package)
16 ounces thinly sliced smoked turkey
Romaine lettuce leaves, center rib cut away
Romato tomatoes, sliced, seeded and drained on a paper towel

Combine mayonnaise, cilantro, green onion, chipotle chilies and lime juice in a food processor; chop and blend well. Season chipotle mayonnaise with salt. Arrange tortillas on work surface. Spread each with 2 tablespoons mayonnaise; top with turkey, lettuce and tomatoes. Roll up tortillas tightly, enclosing filling. Place in a gallon size zip-lock bag and place in the fridge. Great to take to the pool, beach or just on the back porch.

Note: there will be extra mayonnaise left over and it is great for using as a dip for fresh veggies, chips or pretzels.

For an appetizer, wrap the tortilla wraps tightly, chill for a couple of hours, and then slice into pinwheels
