Hoe Cake

½ cup shortening
2 cups self-rising flour
1 cup milk

Preheat oven to 425 degrees. Oil an 8-inch round cake pan or cast iron skillet in the preheated oven for 5 minutes. Meanwhile mix together shortening and flour until pea size clumps form and shortening is well blended into flour. Pour milk into flour mixture and mix until well combined. This mixture will be lumpy. Remove preheated pan from oven. Spread batter evenly in pan and bake for 15 to 20 minutes, or until golden brown. Serve with butter and honey and it makes a yummy, biscuit-like breakfast.
