Jane’s Rice Salad

When I was in college, I worked for Jane as a nanny. She was a mom of 3 adorable boys, who ran me ragged, but I loved it. On top of everything, Jane was a fabulous cook as were all her friends. She shared most of her recipes with me when I became engaged to my husband. This was one of her recipes she made all the time and one day she showed me how to make it. Jane’s Rice Salad

1 package Uncle Ben’s Chicken Flavored Rice mix
4 green onions, sliced
½ cup chopped green bell pepper
½ cup Hellman’s mayonnaise
12 green olives stuffed with pimientos, sliced
2 (6 ounce) jars artichoke hearts, drained, reserving liquid
¾ teaspoon curry powder

Cook rice according to package directions. Chill for 1 hour. Add green onions, bell peppers, olives, and artichoke hearts. Mix remaining ingredients together, then toss with rice mixture.

Makes 4 servings
