Tomato Bisque

This recipe comes from my dear friend Wendy. She is a great cook and a vegetarian-so EAT YOUR VEGGIES!

Tomato Bisque

from the kitchen of Wendy Salmon Payne

4 tablespoons butter
2 medium onions, diced
6 cups chicken broth
1 (#10) can crushed tomatoes
Salt & Pepper to taste
1 to 2 tablespoon sugar
2 cups water
3 to 4 cups half n half

In a medium to large saucepan, melt butter and sauté shallots for about 5 minutes. Add chicken broth, tomatoes, Salt & Pepper, sugar and water. Bring to a boil, then turn to simmer for at least 1 hour or up to 6 to 8 hours (transfer to crock pot) Half hour before you eat, slowly add milk and reserve tomato juice continue to simmer.


Makes a lot! :)
