JFL Pimiento Cheese
1 pound sharp cheddar cheese, shredded-I use ½ pound sharp cheddar and ½ pound sharp Vermont white cheddar
½ pound Velveeta cheese, shredded
1 (4 ounce or 2-2 ounce) jar chopped pimientos, drained
½ cup medium Pace picante sauce
½ teaspoon salt
1 add freshly cracked black pepper to taste and a couple of dashes of hot sauce-Tabasco or Crystal’s, but that is not part of the original recipe
½ cup Hellman’s mayonnaise
Mix together all ingredients together and if you can stand it, let flavors blend for 1 to 2 hours. It lasts almost forever in the fridge. Try it as a grilled cheese on sourdough or just as is with crackers or on bread with sliced tomatoes and lettuce.
