Lemon Squares

Lemon Squares

Crust:
1 cup butter
1 3/4 cup flour
2/3 cup confectioner's sugar (plus more for dusting)

Topping:
1 1/2 cup plain sugar
1/4 cup flour
1 tsp baking powder
4 eggs
1/2 cup lemon juice*

Preheat oven to 350 degrees. Grease and flour a 9 X 13-inch pan.
For the crust: In the bowl of a food processor, blend the flour and confectioners’ sugar. Add butter and blend until peas-sized balls form. Press mixture into bottom of pan and bake for 20 minutes or until golden.
For the topping:While crust is in the oven baking, prepare the lemon layer. In a mixing bowl, add sugar, flour and baking powder. Add eggs, one at a time, mixing well after each addition. Add the lemon juice and mix thoroughly. Once crust is baked, pour lemon mixture over crust and bake for 20 to 25 minutes or until lemon mixture is set and slightly golden on top. When the squares have cooled to room temperature, dust them heavily with sifted confectioners’ sugar and chill. Once squares have chilled, cut into squares and enjoy!

*Key lime juice would make these divine!
