This recipe came from my friend Kristen. When we were working moms in Memphis (she and her family have since moved to Detroit), once a month we would get together and cook for the entire month. We would marinate and chop and prep and laugh and talk until we couldn't stand anymore. We would ultimately have 20 to 30 meals for us to pack in our freezers and have ready for our starving hubbies and kids. This is a recipe we had to go with our grilled pork tenderloin. Mango Salsa
from the kitchen of Kristen Woodward Benjamin
1 peeled mango, seeded and diced
1/4 cup minced white onion
2 tablespoons minced red bell pepper
1 teaspoon minced fresh cilantro
1 teaspoon fresh lime juice
1/2 teaspoon finely minced habanera pepper, or the pepper of your choice
1/8 teaspoon salt
Combine all ingredients in a bowl. Cover and chill for several hours. Great served with tortilla chips, tacos, burritos, fajitas or with a grilled chicken or pork loin.
