Flour Tortillas

Flour Tortillas (and a post from over 2 years ago!)

Let me tell you about my morning! First let me preface this by saying, I do not work outside the home, at this time and I am my family's personal slave. This morning, my darling daughter, Catie, who likes to terrorize me in the morning with her reluctedness to do anything I say, woke up, in a fairly decent mood, got dressed, without telling me I am trying to ruin her life, and brushed her teeth, without tears involved (usually mine!) Catie came down the stairs and looked at me with her blue-lilac eyes and said, "Mommy, would you fix me my favorite thing in the world?" and I said to her, "What is that Buggy-Boo?", she said with a growl, "Stop calling me that baby name!" I said, "Never mind-what is your favorite thing in the world?" Miss Catie responded, "Flour Tortillas!" All I could think is "UGH!", like Charlie Brown! It is not that they are hard, but I have to lug out the food processor, deal with my old cranky stove top (Please die stove-NOW!!!) and roll out 8 flour tortillas for my precious angel. Also, the tortillas ideally need to rest at least 30 minutes and it is 20 minutes until we leave for school. Normally I would say, "Not now." or "we don't have time" or under my breath something I cannot utter because I am trying to keep this group G-Rated and I am working on cleaning up my potty word collection. I digress. Like I said, I do not work outside the home and I am my family's slave, so what have I got to do other than my taxi service, maid service and my eating bon bons and watching soaps (that is what my husband thinks I do all day!) So, I make the tortillas, burn 1 or 2 (Darn stove!) and when I have finally made 6 lovely tortillas, Catie butters, eats 2 of them and says, "Mom, you are the Bestest Mommy in the whole world!" So, do you think it was worth the lugging and rolling and ughing? YES!!! Hope you all have a blessed day-I have bon bons and soaps to get caught up on-NOT!

Flour Tortillas
2 cups all-purpose flour
1 teaspoon salt
1/4 cup Crisco (NOT butter-flavored)
1/2 cup very hot water

In the bowl of a food processor, add the flour and salt. Pulse to blend. Add shortening and pulse to blend. With the food processor running, add hot water and run until a ball almost forms. Dump tortilla dough out on the counter and remove the blade-Don't cut yourself! Knead the dough slightly just to get it smooth. Pat into an even ball and then cut into 8 even triangles. Roll each triangle into a smooth ball and set aside (I let them rest about 30 minutes with a tea towel over them. Heat a large non-stick pan on medium heat. You want it to sizzle when a dop of water "dances" on the surface, but does not sputter. After the dough has rested, roll out each ball into a thin circle. Place circle on preheated skillet and allow to cook until pillows of dough form, then flip. Cook an additional minute and serve with butter or with homemade fajita fixin's (Recipe will follow)
Note: The first tortilla is sometimes like the first pancake-not good! Do not get frustrated...it is worth the effort. Enjoy!
