Chicken Divan

Chicken Divan

2 ½ pounds boneless and skinless chicken breasts, cooked and shredded or chopped
1 (10 ounce) package frozen broccoli flowerets, thawed and drained
10 ounces button mushrooms, cleaned and halved
1 (10 ½ ounce) can cream of mushroom soup
¾ cup Hellman’s mayonnaise
¾ cup milk
¾ teaspoon curry powder
1 cup shredded cheddar cheese
2 to 3 tablespoons sherry
2 cups buttered bread crumbs

Preheat oven to 350 degrees. Grease a 9x13-inch baking dish. Layer shredded chicken, broccoli, and mushrooms, in that order, in the prepared dish. Mix together soup, mayonnaise, milk, curry powder and sherry. Pour over chicken, broccoli and mushrooms. Top with cheese and then buttered bread crumbs. Bake for 30 to 35 minutes until golden brown and bubbly.

Makes 6 to 8 servings
