Quick and Easy French Onion Soup
1 tablespoon butter
¾ pound onions (about 1 medium-large onion), halved and thinly sliced
4 cups of beef broth
4 slices of French bread
2 cups Swiss cheese, shredded
Parmesan cheese
Preheat the oven to broil. Melt the butter in a 2 quart pot. Add the onions and sauté until they are tender. You should be able to see through them. Pour the broth on top of the onions.
Reduce heat and simmer until heated through, stirring frequently. Place the bread on a cookie sheet. Sprinkle the Swiss cheese evenly over the bread. Toast the bread in the oven until the cheese is melted and the edges are golden (about 3 minutes). Pour the soup into 4 bowls. Top each bowl of soup with a slice of bread. Finish off by sprinkling with Parmesan cheese.
