Easy Beefy Spanish Skillet
2 tablespoons vegetable oil
1 cup uncooked white rice (I used Jasmine rice)
½ cup chopped onion
½ cup chopped bell pepper
1 pound ground beef
2 (6 ounce) cans tomato sauce
1 cup water
Salt, pepper and garlic powder to taste
In a large skillet, over medium heat, heat the vegetable oil then add the rice, onion and bell pepper. Sauté rice mixture for 5 minutes, or until the onions are tender and translucent. Add the ground beef and cook until all the beef is cooked through. Drain off excess fat (I always rinse my cooked ground beef with hot, hot water to remove any excess fat.) Add tomato sauce and water. Check mixture for seasoning. Reduce heat to low, cover and cook for 20 minutes. Adjust seasoning, if necessary.
