Bacon in the Oven

Bacon in the oven

Bacon (I like Applewood Smoked)
Rimmed sheet pan
Aluminum Foil

Preheat oven to 400. Line the baking sheet with foil leaving extra hanging off the sides. Place slices of bacon on the foil making sure the slices do not touch. Bake for 15 to 20 minutes, checking after 12 minutes. This also allows you to make floppy or crisp bacon. Remove pan from oven when bacon is cooked the way you want it. Place bacon on a paper bag or paper towel lined plate. Allow to cool slightly and serve. Let the bacon grease on the foil cool for 5 minutes. Pour into a glass jar or tin can or if you are not going to use it again (Shame on you-bacon grease has great flavor and is wonderful with green beans, corn, spinach, or for hot bacon dressing) gather up the foil in a bundle and throw it away. Clean up is truly a breeze.
