BBQ Chicken Pizza

BBQ Chicken Pizza

1 Large Boboli pizza crust or a homemade pizza crush
2 boneless and skinless chicken breasts
1 bottle of your favorite BBQ sauce-I like Corky’s or Rendezvous, when I am in Memphis
1 ½ cups shredded Monterey Jack Cheese
½ cup thinly sliced red onions
¼ cup chopped fresh cilantro

Preheat oven to 425 degrees. In a small saucepan, add chicken breasts and half of the bottle of BBQ sauce. Cook, over medium low heat, the chicken breasts until they are cooked through. Remove chicken from sauce and set aside to cool. Discard sauce that the chicken was cooked in. Once cool, shred chicken. Spread remaining BBQ sauce over pizza crust. Top with shredded chicken, red onion, and chopped cilantro. Top with cheese. Bake the pizza at 425 degrees for 10 to 12 minutes, or until cheese is melted and bubbly. Cool 5 to 10 minutes before slicing.
