Broiled Salmon with Orange-Miso Glaze
1/3 cup yellow miso (I used white miso)
2 T juice from an orange
1 T mirin (you could probably substitute a T of wine here- I think white would be the closest)
2 tsp soy sauce
1 tsp dark brown sugar
1 tsp grated orange peel
6 6-oz. salmon fillets (each about 1 1/2 in. thick)
Finely chopped green onions
Whisk the first 6 ingredients in a small bowl. Preheat broiler. Line a baking sheet with aluminum foil. Place salmon on foil skin side down. Spread miso mixture over the salmon. Broil the fish until glaze begins to blister and brown, about 3 minutes. Cover fish loosely with foil. Broil until fish is cooked through, about 5 minutes longer. Transfer fish to plates. Top with onions.
That's the directions they recipe provided. We changed it up a bit and baked the salmon instead of broiling it. It took about 10 minutes or so in a 400 degree oven. The sauce never browned- and was more like a sauce than a glaze. We also cut the recipe in half and used all of the sauce on 2 fillets. It would go well with just about anything- like brow rice and broccoli or a salad.
