Cheddar Cheese Pie
Recipe adapted from The Potluck Club, a novel on page 375
½ cup chopped onion
2 tablespoons butter
1 (9-inch) deep pie shell, baked
1 cup grated cheddar cheese
1 cup scalded milk
3 eggs, lightly beaten
½ teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon thyme
8 slices bacon, cooked and crumbled
Preheat oven to 350 degrees. Sauté the onions in butter, about 5 minutes. In a bowl, combine cooked onions with cheese, milk, eggs, salt, pepper, thyme and crumbled bacon. Pour mixture into baked pie shell that is on a rimmed baking sheet. Bake for 20 to 25 minutes. Make sure a knife inserted into middle of pie comes out clean. If not, return to oven and cook for an additional 5 minutes or until pie is set.
Makes 6 to 8 servings
