Cherry Tomato Salad
1 pint cherry (or grape) tomatoes, cleaned and halved, and dried thoroughly
6 bacon slices (you can use turkey bacon)
¼ cup Hellman’s mayonnaise (you can use low fat mayo)
1 tablespoon tarragon (or white wine) vinegar
2 tablespoons olive oil
¼ teaspoon salt
1 tablespoon fresh basil, chopped
6 Romaine lettuce leaves
2 tablespoons chives, chopped
In a skillet, fry bacon until crisp, set aside to cool and then crumble. In a bowl, mix together mayonnaise, vinegar, olive oil, salt and basil. Add tomatoes and crumbled bacon. Toss to coat. Serve on lettuce leaves and sprinkle with chives.
Makes 6 servings
