Classic Sugar Cookies
1 cup butter
1 cup powdered sugar
½ cup white sugar (I used vanilla sugar)
1 egg
1 teaspoon vanilla extract
½ teaspoon baking soda
½ teaspoon cream of tartar
½ teaspoon salt
2 cups + 2 tablespoons all purpose flour
Decorating sugar
Melt butter. Remove from heat and whisk in sugars. Allow mixture to come to room temperature. Whisk in egg. Add vanilla extract, baking soda, cream of tartar, and salt. Mix well. Add flour in small amounts until all flour is incorporated. Chill dough for 1 hour.
Preheat oven to 325 degrees. Scoop walnut-size balls of dough out. Roll in your hands, then roll in decorating sugar. Place cookie balls on a greased cookie sheet or a silicone mat on a cookie sheet. Press cookies down slightly. Bake cookies for 12 to 15 minutes, or until slightly golden on the edge. Cool cookies on the baking sheet for 2 minutes, then cool completely on cookie cooling rack.
Makes about 3 dozen cookies
