Corn with Chile, Cilantro and Lime Butter

Corn with Chile, Cilantro and Lime Butter

½ cup butter, softened
2 cloves garlic, minced
1 lime, zested and juiced
1 tablespoon chopped cilantro
1 tablespoon chile powder
½ teaspoon ground cumin
Salt and Pepper, to taste
4 ears of fresh corn, cleaned of silk, but do not remove husks, only peel back

Preheat grill on high heat. In a bowl, mix together remaining ingredients and set aside. Place peeled back corn on the grill. Turn every 1 to 2 minutes until lightly charred. Brush with prepared butter and serve.

Makes 4 servings
