Eclair Cake-it is one of those desserts that was really popluar 20+ years ago and I am bringing it back. It is easy and rich.

Éclair Cake
2 (3.5 ounce) boxes instant vanilla pudding mix
1 (8 ounce) container Cool Whip-Regular or Lite
3 cups milk, NOT Skim milk
1 (16 ounce) package graham crackers
1 (16 ounce) container chocolate frosting
In a bowl, blend the pudding mix, Cool Whip and milk. Line the bottom of a 9x13-inch glass dish with graham crackers. Spread half the pudding mixture evenly over the graham crackers. Top with another layer of graham crackers and then the remaining pudding mixture. Top with a layer of graham crackers. Heat the frosting mixture for 30 seconds to 1 minute or until slightly pourable. Pour frosting over top graham cracker layer. Spread frosting evenly over graham crackers. Allow to sit for 10 minutes, then cover and chill for 4 hours before serving.
Makes 12 servings
