Shortbread Cookies
1 1/2 cups (3 sticks) unsalted butter, chilled, cut into small pieces
3/4 cup sugar
2 teaspoons pure vanilla extract
3 cups plus 1 tablespoon all-purpose flour, plus more for dusting
Pinch of salt
Preheat oven to 325 degrees. In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar for 1 minute. Add vanilla, flour, and salt, and mix until just combined, 1 to 2 minutes more.
On a lightly floured surface, roll dough to 1/4 inch thickness. Cut out desired shapes and place on a parchment-lined or silicone-lined cookie sheet. Bake cookies until they are just beginning to color and are lightly firm to the touch, 15 to 18 minutes. Remove to cooling rack, and let cool completely.
