"Smugglers” Pancake Mix
I have no idea why these are called smugglers. I got this recipe from Nigella Lawson and fine tuned it for my family. All I know is that my family loves these silver dollar pancakes on Saturday morning or, if I am so inclined, during the week. My daughter, Catie, loves them with mini chocolate chips sprinkle on top while they are cooking and my son, Drew, loves them with butter and cinnamon sugar. I hope this becomes your go to pancake recipe.
Pancake mix
(I double this recipe and put the ingredients in a big apothecary jar from Wal-Mart. I printed out the recipe for the pancakes and taped it to the jar-sometimes I am such a goober!)
4 cups all-purpose flour
3 tablespoons baking powder
2 teaspoons baking soda
1 teaspoon salt
3 tablespoons granulated sugar
Whisk well and store in an air-tight jar.
To make pancakes:
1 cup mix
1 cup milk
1 teaspoon lemon juice or vinegar
1 egg
1 tablespoon butter, melted
Whisk ingredients together and set aside. Heat a flat griddle or pan over medium-high heat. Drop 1 tablespoon batter on preheated griddle (I use a tablespoon measure for this) When bubbles appear on the surface of the pancakes, flip them over to make them golden brown on both sides.
Chocolate chip pancakes:
After spooning batter onto the griddle, sprinkle with ½ teaspoon mini chocolate chips. When bubbles appear around the edges, flip the pancakes and cook for about 45 seconds to a minute.
