The Peabody’s Stuffed Onions

3 packages (10 ounces each) frozen spinach, thawed, cooked and drained
1 pound hot pork sausage, cooked and drained
1 cup Parmesan cheese
8-10 saltines, crushed
3 eggs
1 to 3 onions*, thickly sliced
1 to 1 ½ cups shredded cheddar cheese
Mix all ingredients, except onions. Place ice cream scoops of spinach mix on onion slices. Bake at 350 degrees for 20 to 25 minutes. Place cheddar cheese on top of spinach mixture and return to oven until cheese melts.
*Note: This recipe was given to me about 25 years ago, before the onslaught of the gourmet onions like Vidalia and Walla Walla-I think either one of those would taste great!
